They teach min mapping to kids at primary schools these days. My 9 year old uses them to help her write poetry. She had moderate success using FreeMind on the Mac without any interference from me. I’m generally not enamoured with java apps but this one’s pretty good.

I’m not keen on Java apps either as most seem slow and quite buggy. This however is quick and crash free so far.
